膳食碳水化合物是一类源自植物的异质性分子,包括单糖、双糖、寡糖、多糖和膳食纤维。已有充分证据表明,摄入大量含果糖的糖类会对健康产生不利影响,而摄入大量膳食纤维则有益健康。然而,我们仍需深入了解添加糖产生有害健康影响的机制,以及这些影响与其他碳水化合物和非营养性甜味剂的影响有何不同;同样,我们对膳食纤维和膳食纤维补充剂的保护作用,尤其是其通过影响肠道菌群而发挥的保护作用,仍知之甚少。高碳水化合物饮食与高脂肪饮食的健康影响孰优孰劣,目前仍存在争议,其答案可能取决于碳水化合物的来源(简单碳水化合物与复杂碳水化合物、精制碳水化合物与未精制碳水化合物、谷物与豆类)和/或个体的基因型或表型。因此,“碳水化合物”栏目旨在增进对膳食碳水化合物异质性的理解,并确定促进健康和预防疾病的最佳膳食碳水化合物组成。
